While it's possible to test positive by eating pig products, it is very hard to do in the industrialised meat production industry in USA:
It has to be offal
It has to be offal from a non-castrated male post puberty
Non-castrate post puberty male pigs are hard to find. The American Society of Animal Science say, "In the United States, nearly 100 percent of male pigs are castrated."
"Ethically raised" non-castrated males are generally slaughtered pre-puberty at a smaller size to avoid boar taint. You can't test positive from their offal because they never hit puberty.
Offal from non-castrated post puberty males is only really obtainable from certain ethical/free range suppliers. This is generally much more expensive and targeted at specialist markets.
Even if you can find the "right" offal, the amount needing to be eaten is high to meet the positive results cited in the research above - 375g or 13 oz.
Offal is less dense than flesh so 375g of offal is likely to take up double the space of an equivalent weight steak. That's a big mofo of a burrito.
Even if you eat the large amount of the right offal, you chances are still low - 1 case out of 50 according to the base reasearch referenced.
It's a real obstacle couse in the USA to have all the circumstances described above coincide in the right timeframe just before one of the 6-12 random tests each year. The chances of all those things lining up are definitely not zero but they are very low indeed.
Please note that animal husbandry practices are substantially different around the world, so the chances of this happening in non-USA countries can be much higher.
